Ingredients:

  • 3 carrots, peeled

  • 7 large eggs

  • 200g canned ham, diced

  • 1 red bell pepper, finely diced

Instructions:

  1. Cook the Base Ingredients: Place the whole peeled carrots and the eggs in a medium pot. Cover with cold water and bring to a boil. Once boiling, cook for about 10-12 minutes, until the carrots are tender but still firm (you can pierce them with a fork). Remove the carrots and let them cool. Continue boiling the eggs for a full 10 minutes for hard-boiled eggs.

  4. Combine the Salad: In a large mixing bowl, gently combine the diced carrots, diced eggs, diced ham, diced red pepper, peas, and corn.

  5. Make the Dressing: In a small bowl, whisk together the mayonnaise, yogurt, black pepper, and salt until smooth and creamy.
