Feta-Parmesan Roasted Stuffed Dates Recipe

These Feta-Parmesan Roasted Stuffed Dates are a simple, elegant appetizer that’s bursting with flavor. The combination of sweet dates, creamy feta cheese, and nutty Parmesan, all roasted to perfection, creates a mouthwatering treat that is both savory and sweet. They’re perfect for a holiday party, dinner gathering, or as a savory snack.

Ingredients:

  • 12 Medjool dates (pitted)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)
  • 1/4 teaspoon black pepper
  • Pinch of sea salt (optional, as both cheeses are salty)
  • 1 tablespoon honey (optional, for a sweet finish)
  • Chopped parsley (optional, for garnish)

Instructions:

1. Prepare the Dates:

  • Preheat your oven to 375°F (190°C).
  • Slice each date lengthwise, being careful to remove the pit. You should now have a small pocket in each date for stuffing.

2. Stuff the Dates:

  • In a small bowl, combine the crumbled feta and Parmesan cheese. Mix until well combined.
  • Spoon the cheese mixture into each date, filling the pocket. Be generous with the filling, but don’t overstuff so that it spills out.
  • If desired, drizzle a small amount of honey on top of each stuffed date for an added touch of sweetness that pairs wonderfully with the savory cheeses.

3. Roast the Dates:

  • Place the stuffed dates on a baking sheet lined with parchment paper or a silicone mat.
  • Drizzle a little olive oil over the stuffed dates to help them roast and get golden.
  • Sprinkle the stuffed dates with a bit of fresh thyme (or dried thyme) and a pinch of black pepper. You can also add a touch of salt if desired, but be cautious since the feta and Parmesan already provide saltiness.
  • Roast in the preheated oven for 10-12 minutes, or until the dates are tender and the cheese is slightly melted and golden.

4. Garnish & Serve:

  • Once roasted, remove the stuffed dates from the oven and let them cool slightly.
  • If desired, drizzle with a bit more honey or sprinkle with chopped parsley for a fresh, vibrant garnish.
  • Serve warm and enjoy the sweet, salty, and cheesy deliciousness!

Storage:

  • Refrigeration: If you have leftovers, store them in an airtight container in the refrigerator for up to 2-3 days. To reheat, place them in a 350°F (175°C) oven for about 5-7 minutes, or until warmed through.
  • Freezing: You can freeze these stuffed dates before baking. Place them on a baking sheet in a single layer and freeze them. Once frozen, transfer them to a freezer-safe container or bag. To cook from frozen, bake at 375°F (190°C) for 15-18 minutes, until hot and golden.

Why You’ll Love Feta-Parmesan Roasted Stuffed Dates:

  • Sweet and Savory: The natural sweetness of the dates perfectly complements the rich, salty flavors of the feta and Parmesan.
  • Simple Yet Elegant: This appetizer is quick to prepare but looks and tastes fancy enough to impress guests.
  • Versatile: You can easily customize the stuffing by adding other ingredients like goat cheese, chopped walnuts, or bacon for extra flavor.
  • Perfect for Entertaining: These stuffed dates are an ideal finger food for parties, holidays, or gatherings, offering a delightful combination of textures and flavors.

Tips for Success:

  • Use Fresh Dates: Medjool dates are the best choice for stuffing because they are larger, softer, and sweeter. Make sure they are fresh and tender for the best texture.
  • Cheese Variation: You can experiment with different cheeses, such as blue cheese, cream cheese, or even mascarpone, depending on your taste preference.
  • Herbs: Feel free to switch up the herbs. Rosemary or oregano can be a great alternative to thyme for a slightly different flavor profile.

These Feta-Parmesan Roasted Stuffed Dates are the ultimate crowd-pleasing appetizer. They’re easy to make, beautifully flavorful, and a fun addition to any party or celebration
