Flavorful Beef Casserole Recipes

Here are three simple, flavorful beef casserole recipes—each with a unique twist! Whether you’re craving Mexican, creamy hamburger rice, or cheesy beef noodles, these dishes are easy to make and packed with comfort.


1. Mexican Beef & Rice Casserole 🌮🍚

Ingredients:

  • 2 tbsp olive oil

  • 1 white onion, diced

  • 4 cloves garlic, minced

  • 1 lb ground beef

  • 15 oz corn, drained

  • 15 oz black beans, drained

  • 2 tbsp taco seasoning

  • 14 oz chunky salsa

  • 1 cup Minute Rice (uncooked)

  • 1½ cups chicken broth

  • 2 cups shredded Mexican cheese

Instructions:

  1. Sauté onion, garlic, and beef until browned. Drain fat.

  2. Add corn, beans, taco seasoning, salsa, rice, and broth. Simmer 5 mins.

  3. Stir in 1 cup cheese, transfer to a baking dish, top with remaining cheese.

  4. Bake at 375°F (190°C) for 20 mins until bubbly.

Serve with: Avocado, sour cream, and cilantro.


2. Hamburger Rice Casserole 🍄🧀

Ingredients:

  • 1 lb ground beef

  • 1 packet Lipton Beefy Onion Soup Mix

  • 21 oz cream of mushroom soup

  • 4 oz sliced mushrooms

  • 2 cups beef broth

  • ¾ cup milk

  • ¾ cup sour cream

  • ½ tsp salt & pepper

  • 2 cups Minute Rice

  • 8 oz Colby Jack cheese

  • Parsley (garnish)

Instructions:

  1. Brown beef with soup mix. Drain fat.

  2. Mix in soup, mushrooms, broth, milk, sour cream, salt, and pepper.

  3. Stir in rice, top with cheese, and bake at 350°F (175°C) for 25 mins.

  4. Garnish with parsley.

Tip: Add frozen peas for extra veggies!


3. Cheesy Beef & Noodle Casserole 🍝🧀

Ingredients:

  • 12 oz egg noodles, cooked

  • 1 tbsp olive oil + 1 tbsp butter

  • 1 lb ground beef

  • 1 onion, diced

  • 1 bell pepper, diced

  • 2 tsp garlic, minced

  • 1 tsp Italian seasoning

  • ½ tbsp Worcestershire + soy sauce

  • 14.5 oz roasted garlic tomatoes (undrained)

  • 1 can cream of mushroom soup

  • 1 cup mozzarella + 1 cup cheddar

  • ¼ cup parsley

Instructions:

  1. Sauté beef, onion, pepper, and garlic. Season.

  2. Add Worcestershire, soy sauce, tomatoes, and soup. Simmer 5 mins.

  3. Toss with noodles, top with cheese, and bake at 375°F (190°C) for 15 mins.

Perfect with: Garlic bread and a crisp salad.
