Here’s a simple, wholesome Flourless Oat & Chia Bread recipe—naturally gluten-free, high in fiber, and perfect for toast or sandwiches!

Flourless Oat & Chia Bread

Ingredients (Makes 1 loaf)

  • 2 cups rolled oats (gluten-free if needed)

  • 3 tbsp chia seeds

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 ¼ cups water (or unsweetened almond milk for richness)

  • 2 tbsp maple syrup (or honey; optional for sweetness)

  • 2 tbsp olive oil (or melted coconut oil)

  • 1 egg (or 1 flax egg for vegan: 1 tbsp ground flax + 3 tbsp water)

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.

  2. Blend oats: Pulse oats in a blender or food processor until fine (like flour).

  3. Mix dry ingredients: In a bowl, combine oat flour, chia seeds, baking powder, and salt.

  4. Add wet ingredients: Whisk in water, maple syrup, oil, and egg. Let sit for 5-10 min (chia seeds will thicken the batter).

  5. Bake: Pour into the loaf pan. Bake for 45-50 min until golden and a toothpick comes out clean.

  6. Cool: Let rest in the pan for 10 min, then transfer to a rack to cool completely (it firms up as it cools).

Tips & Variations

  • Add-ins: Stir in seeds (sunflower, pumpkin), nuts, or dried fruit before baking.

  • Savory version: Skip sweetener, add garlic powder and rosemary.

  • Store: Keeps for 3 days at room temp or freeze slices for later!
