Here’s a simple recipe for delicious flourless pancakes that are both easy to make and gluten-free!

Flourless Pancakes Recipe

Ingredients

  • 1 ripe banana
  • 2 large eggs
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • Cooking spray or a little oil for the pan

Instructions

  1. Prepare the Batter:
    • In a bowl, mash the banana until smooth. Add the eggs, baking powder, cinnamon, and salt. Whisk until well combined.
  2. Heat the Pan:
    • Heat a non-stick skillet or frying pan over medium heat and lightly grease it with cooking spray or oil.
  3. Cook the Pancakes:
    • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.
  4. Serve:
    • Remove from the pan and serve warm with your favorite toppings, such as maple syrup, fresh fruit, or yogurt.
