Fluffy Cottage Cheese Cloud Bread

Ingredients

  • 1/2 cup cottage cheese
  • 3 large eggs, separated
  • 1/4 tsp cream of tartar (for stability)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional, for a savory version)
  • 1 tsp honey or sugar (optional, for a slightly sweet version)

Instructions

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Prepare the egg whites:
    • In a clean, dry mixing bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form. Set aside.
  3. Prepare the cottage cheese mixture:
    • In a separate bowl, combine the egg yolks, cottage cheese, baking powder, salt, garlic powder (if using), and honey or sugar (if using). Blend until smooth using a hand mixer or blender.
  4. Fold the mixtures together:
    • Gently fold the egg yolk mixture into the beaten egg whites using a spatula. Be careful not to deflate the egg whites—this is what gives the cloud bread its fluffy texture.
  5. Shape and bake:
    • Scoop the batter onto the prepared baking sheet, forming 6-8 even mounds. Use the back of a spoon to gently shape them into rounds.
    • Bake for 25-30 minutes, or until the cloud bread is golden and set.
  6. Cool and serve:
    • Let the cloud bread cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
    • Enjoy as a low-carb bread alternative for sandwiches, toast, or snacks!

Tips

  • Storage: Store cloud bread in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
  • Flavor variations: Add herbs like rosemary or thyme for a savory twist, or a dash of cinnamon and vanilla for a sweet version.
  • Reheating: Warm the cloud bread in a toaster or oven for a few minutes to restore its texture.

This Fluffy Cottage Cheese Cloud Bread is a versatile, low-carb option that’s easy to make and delicious to eat! Perfect for anyone looking for a lighter bread alternative. 🍞😋
