Fluffy Greek Yogurt Cake (Light & Airy!) 🍰

This extra-fluffy yogurt cake is soft, moist, and slightly tangy, with a delicate crumb that melts in your mouth. Greek yogurt keeps it tender while adding protein, and a touch of baking soda ensures a beautiful rise. Perfect for a simple dessert or breakfast treat!


Fluffy Yogurt Cake Recipe

*(Makes one 8-inch round or 9×5-inch loaf cake)*

Ingredients

Wet Mix:

  • 1 cup (240g) plain Greek yogurt (full-fat for best texture)

  • ¾ cup (150g) sugar

  • ⅓ cup (80ml) vegetable oil (or melted butter)

  • 3 large eggs, separated (whites & yolks divided)

  • 1 tsp vanilla extract

  • Zest of 1 lemon (optional, for brightness)

Dry Mix:

  • 1 ½ cups (190g) cake flour (or all-purpose flour + 2 tbsp cornstarch)

  • 2 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

Optional:

  • Powdered sugar for dusting

  • Fresh berries or whipped cream for serving


Instructions

1️⃣ Prep & Whip Egg Whites

  • Preheat oven to 350°F (175°C). Grease and line your pan.

  • In a clean bowl, beat egg whites until stiff peaks form (this adds fluffiness!). Set aside.

2️⃣ Mix Wet Ingredients

  • In another bowl, whisk yogurt, sugar, oil, egg yolks, vanilla, and lemon zest until smooth.

3️⃣ Combine Dry Ingredients

  • Sift together flour, baking powder, baking soda, and salt.

  • Gently fold dry mix into wet batter (don’t overmix).

4️⃣ Fold in Egg Whites

  • Lightly fold whipped egg whites into the batter in 2 batches, keeping it airy.

5️⃣ Bake

  • Pour into pan and bake 35-45 mins (until golden and a toothpick comes out clean).

  • Cool 10 mins in pan, then transfer to a rack.
