3 large eggs, separated (whites & yolks divided)

Zest of 1 lemon (optional, for brightness)

3️⃣ Combine Dry Ingredients
-
Sift together flour, baking powder, baking soda, and salt.

Gently fold dry mix into wet batter (don’t overmix).
4️⃣ Fold in Egg Whites
-
Lightly fold whipped egg whites into the batter in 2 batches, keeping it airy.
5️⃣ Bake
-
Pour into pan and bake 35-45 mins (until golden and a toothpick comes out clean).
-
Cool 10 mins in pan, then transfer to a rack.
