Fluffy Potato Dinner Rolls Recipe

Ingredients

  • For the Dough:
    • 1 cup mashed potatoes (about 2 medium potatoes)
    • 1/2 cup warm milk (110°F or 43°C)
    • 1/4 cup sugar
    • 1/4 cup unsalted butter, melted
    • 1 large egg
    • 2 1/4 tsp (1 packet) active dry yeast
    • 1 tsp salt
    • 3-4 cups all-purpose flour (more as needed)
  • For Topping (optional):
    • 2 tbsp melted butter
    • Sea salt or herbs (like rosemary or garlic powder)

Instructions

  1. Prepare the Mashed Potatoes:
    • If you don’t have leftover mashed potatoes, peel and boil the potatoes until tender. Mash them without adding any butter or milk, and let them cool.
  2. Activate the Yeast:
    • In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  3. Mix the Dough:
    • In a large mixing bowl, combine the mashed potatoes, melted butter, egg, and salt. Mix until well combined.
    • Add the yeast mixture and mix well. Gradually add the flour, one cup at a time, until a soft dough forms. You may need 3 to 4 cups depending on humidity.
  4. Knead the Dough:
    • Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic. The dough should be slightly sticky but not overly wet.
  5. First Rise:
    • Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1-2 hours.
  6. Shape the Rolls:
    • Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 12 equal pieces and shape each piece into a ball.
    • Place the balls in a greased 9×13-inch baking dish or on a parchment-lined baking sheet.
  7. Second Rise:
    • Cover the rolls with a towel and let them rise again for about 30-45 minutes, or until they puff up.
  8. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  9. Bake the Rolls:
    • Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown.
  10. Add Topping (optional):
    • If desired, brush the tops with melted butter and sprinkle with sea salt or herbs immediately after baking.
  11. Cool and Serve:
    • Let the rolls cool slightly before serving. They’re best enjoyed warm!
