Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and line an 8-inch round cake pan with parchment paper.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients:
    • In another bowl, beat the eggs until light and frothy.
    • Add honey or maple syrup, applesauce, melted coconut oil, and vanilla extract to the eggs. Mix well.
  4. Combine Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk. Mix until well combined and smooth.
  5. Bake:
    • Pour the batter into the prepared cake pan.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve:
    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
    • Serve plain or with your favorite frosting.
