Ingredients:

  • 4 large russet potatoes
  • 4 tablespoons (60ml) olive oil
  • Salt and pepper to taste
  • 1 cup (240ml) sour cream
  • 1 cup (115g) shredded cheddar cheese
  • 4 tablespoons (57g) unsalted butter
  • 1/4 cup (60ml) whole milk
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup (25g) chopped green onions
  • Optional toppings: chives, extra cheese, or additional bacon

Instructions:

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Scrub the potatoes clean under running water, then pat them dry.
    • Rub each potato with olive oil and sprinkle with salt.
    • Pierce each potato several times with a fork to allow steam to escape during baking.
  2. Bake the Potatoes:
    • Place the potatoes directly on the middle oven rack.
    • Bake for about 1 hour, or until the potatoes are tender when pierced with a fork.
  3. Prepare the Filling:
    • Once the potatoes are done, remove them from the oven and let them cool slightly.
    • Cut each potato in half lengthwise. Scoop out the insides into a mixing bowl, leaving about a 1/4-inch shell.
    • Add the sour cream, shredded cheddar cheese, butter, and milk to the potato insides. Mash until smooth.
    • Season with salt and pepper to taste.
  4. Stuff the Potatoes:
    • Spoon the mashed potato mixture back into the potato shells.
    • Sprinkle the crumbled bacon and chopped green onions over the top.
  5. Final Bake:
    • Return the stuffed potatoes to the oven and bake for an additional 15 minutes, or until the tops are golden and the cheese is melted.
  6. Serve:
    • Remove from the oven and let cool slightly before serving.
    • Optional: Garnish with chives, extra cheese, or additional bacon.
