Ingredients:

  • 4 large apples (Granny Smith, Honeycrisp, or a mix)
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (120ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) whole milk
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Prepare the Apples:
    • Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
    • Peel, core, and dice the apples into small cubes. Set aside.
  2. Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Mix the Wet Ingredients:
    • In a large bowl, beat the eggs and granulated sugar together until the mixture is pale and thick.
    • Add the vegetable oil and vanilla extract, and mix until well combined.
    • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  4. Combine and Bake:
    • Fold the diced apples into the batter, ensuring they are evenly distributed.
    • Pour the batter into the prepared cake pan and smooth the top with a spatula.
    • Bake for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Cool and Serve:
    • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
    • Dust with powdered sugar before serving, if desired.
