French Breakfast Puffs

Ingredients

  • For the muffins:
    • 1/3 cup (75g) shortening or unsalted butter, softened
    • 1/2 cup (100g) granulated sugar
    • 1 large egg
    • 1 1/2 cups (190g) all-purpose flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/4 tsp ground nutmeg
    • 1/2 cup (120ml) whole milk
  • For the coating:
    • 1/2 cup (115g) unsalted butter, melted
    • 1/2 cup (100g) granulated sugar
    • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. Make the muffin batter:
    • In a large bowl, cream together the shortening (or butter) and sugar until light and fluffy.
    • Beat in the egg until well combined.
    • In a separate bowl, whisk together the flour, baking powder, salt, and nutmeg.
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
  3. Bake the muffins:
    • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
    • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  4. Prepare the coating:
    • In a small bowl, mix the sugar and cinnamon.
    • Place the melted butter in another bowl.
  5. Coat the muffins:
    • While the muffins are still warm, dip the tops into the melted butter, then roll them in the cinnamon-sugar mixture.
  6. Serve:
    • Enjoy warm or at room temperature.

Tips

  • Storage: Store the muffins in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Reheat before serving.
  • Add-ins: Fold in 1/2 cup of fresh blueberries or chopped nuts for extra flavor.
  • Make ahead: Prepare the batter the night before, cover, and refrigerate. Bake fresh in the morning.

These French Breakfast Puffs are a sweet, fluffy, and irresistible treat that’s perfect for starting your day. Enjoy! 🧁✨
