  • 1 cup long-grain white rice
  • 2 cups beef broth (or chicken broth for a milder flavor)
  • 1 medium onion, finely sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme (optional)
  • 1/4 tsp salt (adjust based on the saltiness of the broth)
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional, for a creamy finish)
  • Chopped fresh parsley (for garnish, optional)

Directions:

  1. Caramelize the onions:
    • In a medium saucepan or skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the sliced onions and a pinch of salt.
    • Cook the onions, stirring frequently, for about 15-20 minutes until they are golden brown and caramelized. If the onions start sticking, add a splash of water to deglaze the pan.
  2. Toast the rice:
    • Add the uncooked rice to the pan with the caramelized onions. Stir to coat the rice in the butter and onion mixture, cooking for 1-2 minutes to lightly toast the grains.
  3. Add broth and seasoning:
    • Pour in the beef broth, garlic powder, thyme, black pepper, and any additional salt if needed. Stir well to combine.
  4. Simmer the rice:
    • Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and let the rice simmer for 18-20 minutes, or until the liquid is fully absorbed and the rice is tender.
  5. Add finishing touches:
    • Remove the pan from the heat and let the rice sit, covered, for 5 minutes. Fluff the rice with a fork, stir in the remaining tablespoon of butter, and sprinkle with Parmesan cheese if using.
  6. Serve and enjoy:
    • Garnish with fresh parsley if desired, and serve the French Onion Butter Rice as a delicious side dish to roasted meats, chicken, or even on its own.
