French Onion Chicken Bake

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef or chicken broth
  • 1 tbsp balsamic vinegar (optional)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • Salt and pepper to taste
  • 1 cup shredded Gruyère or Swiss cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Caramelize the Onions:
    • In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
    • Add the minced garlic and cook for an additional minute until fragrant.
  3. Prepare the Chicken:
    • While the onions are caramelizing, season the chicken breasts with salt, pepper, and thyme.
    • In a separate pan, sear the chicken breasts over medium-high heat for about 3-4 minutes on each side until golden brown. They do not need to be cooked through.
  4. Assemble the Bake:
    • In a baking dish, spread the caramelized onions evenly on the bottom.
    • Place the seared chicken breasts on top of the onions.
    • Pour the broth and balsamic vinegar (if using) over the chicken.
  5. Bake:
    • Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
    • After baking, remove the foil and sprinkle the shredded cheese over the chicken. Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  6. Serve:
    • Let it rest for a few minutes before serving. Garnish with fresh parsley if desired.

Tips:

  • This dish pairs well with crusty bread, rice, or a side salad.
  • You can add mushrooms to the onion mixture for additional flavor.
