Fried Chicken

Ingredients

  • For the Chicken:
    • 4-6 pieces of chicken (legs, thighs, or breasts)
    • 2 cups buttermilk
    • 2 cups all-purpose flour
    • 1 tablespoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • Oil for frying (vegetable or peanut oil)

Instructions

  1. Marinate the Chicken:
    • In a large bowl, soak the chicken pieces in buttermilk. Cover and refrigerate for at least 1 hour (or overnight for best flavor).
  2. Prepare the Coating:
    • In another bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper.
  3. Coat the Chicken:
    • Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it’s fully coated. Shake off any excess flour.
  4. Fry the Chicken:
    • In a large skillet or deep fryer, heat about 1 inch of oil to 350°F (175°C). Fry the chicken in batches for about 12-15 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove and drain on paper towels.

Mashed Potatoes

Ingredients

  • For the Mashed Potatoes:
    • 4-5 large russet potatoes, peeled and diced
    • 1/2 cup butter (1 stick)
    • 1/2 cup milk (or heavy cream for richer flavor)
    • Salt and pepper to taste
    • Optional: garlic powder or roasted garlic for extra flavor

Instructions

  1. Boil the Potatoes:
    • In a large pot, cover the diced potatoes with water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  2. Mash the Potatoes:
    • Drain the potatoes and return them to the pot. Add the butter and milk. Mash until smooth and creamy. Season with salt, pepper, and optional garlic powder to taste.

Serve

  • Plate the fried chicken alongside a generous helping of mashed potatoes. You can also serve with gravy if desired.

Tips

  • For extra crispy chicken, let it rest on a wire rack for a few minutes before serving.
  • Add some chopped herbs like parsley or chives to the mashed potatoes for a fresh touch.
