Fudgy Chocolate Easter Cake with Dark Chocolate Ganache & Cadbury Mini Eggs

A decadent, moist chocolate cake topped with glossy ganache and pastel Mini Eggs – perfect for Easter!


🍫 Ingredients

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder (Dutch-process preferred)
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • ½ cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot coffee (or hot water)

For the Ganache:

  • 1 cup (170g) dark chocolate chips (or chopped chocolate, 60-70% cocoa)
  • ½ cup (120ml) heavy cream
  • 1 tbsp light corn syrup (optional, for shine)

For Decoration:

  • 1 cup Cadbury Mini Eggs (crushed + whole)
  • Pastel sprinkles (optional)

📝 Instructions

1. Bake the Cake

  1. Prep: Preheat oven to 350°F (175°C). Grease a 9×13-inch pan and line with parchment paper.
  2. Dry ingredients: Whisk flour, sugar, cocoa, baking soda, baking powder, and salt in a large bowl.
  3. Wet ingredients: In another bowl, beat eggs, buttermilk, oil, and vanilla. Pour into dry ingredients and mix until just combined.
  4. Add coffee: Slowly stir in hot coffee (batter will be thin). Pour into prepared pan.
  5. Bake 30-35 mins until a toothpick comes out clean. Cool completely.

2. Make the Ganache

  1. Heat cream: Warm cream in a saucepan until steaming (do not boil).
  2. Melt chocolate: Pour over chocolate chips in a bowl. Let sit 2 mins, then stir until smooth. Add corn syrup (if using).
  3. Cool slightly: Let thicken for 10-15 mins before spreading.

3. Decorate!

  1. Spread ganache over cooled cake.
  2. Top with Mini Eggs: Scatter crushed and whole eggs over the top. Add sprinkles if desired.
  3. Let set 1 hour before slicing.

💡 Tips

✔ Extra fudgy: Underbake by 1-2 mins for a gooey texture.
✔ No coffee? Use hot water + 1 tsp instant espresso powder (enhances chocolate flavor).
✔ Make ahead: Bake cake 1 day early; store covered. Add ganache day-of.
