Ingredients

  • 2 lbs pork ribs, cut into serving pieces
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 large tomato, chopped
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 cup water
  • 1 tbsp cooking oil
  • Salt and pepper to taste
  • Optional: green chilies for added spice

Instructions

1. Prepare the Pork Ribs:

  1. Rinse the ribs and pat them dry. Season with salt and pepper.

2. Sear the Ribs:

  1. Heat the cooking oil in a pot over medium heat.
  2. Sear the pork ribs until lightly browned on all sides. Remove from the pot and set aside.

3. Sauté Aromatics:

  1. In the same pot, sauté the garlic until fragrant.
  2. Add the onion and tomato, and cook until softened.

4. Simmer the Ribs:

  1. Return the ribs to the pot. Stir in the soy sauce and vinegar. Do not stir for 2-3 minutes to allow the vinegar to cook off.
  2. Add water and bring to a boil. Lower the heat to a simmer, cover, and cook for 30-40 minutes or until the ribs are tender. Add more water if needed.

5. Season and Serve:

  1. Adjust seasoning with salt and pepper to taste.
  2. Add green chilies if desired for a spicy kick.
  3. Serve hot with steamed rice.

Tips

  • Optional Additions: Add potatoes, carrots, or bell peppers for extra texture and flavor.
  • Make It Sweet: Add 1 tsp of sugar or a drizzle of banana ketchup for a sweeter version.
