Ingredients:

For the Shrimp Scampi:

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh parsley (for garnish)

For the Lasagna:

  • 9-12 lasagna noodles (cooked according to package directions)
  • 1 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese (plus extra for topping)
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped fresh basil (or spinach, optional)
  • 2 cups heavy cream
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

For the Assembly:

  • 1/2 cup shredded Parmesan cheese (for topping)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Shrimp Scampi:

  • In a large skillet, melt 3 tablespoons of butter over medium heat.
  • Add the minced garlic and cook until fragrant, about 1 minute.
  • Add the shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque.
  • Add the crushed red pepper flakes (optional), lemon juice, and season with salt and pepper. Stir to combine.
  • Remove the shrimp from the skillet and set aside. Reserve the garlic butter sauce in the pan for later use.

2. Prepare the Lasagna:

  • Cook the lasagna noodles according to the package directions. Drain and lay them out flat on a clean surface to prevent sticking.
  • In a medium mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup Parmesan cheese, egg, garlic powder, and a pinch of salt and pepper. Stir until smooth and well combined.
  • In a separate bowl, mix together the heavy cream, olive oil, and chopped basil (or spinach). Season with salt and pepper to taste.

3. Assemble the Lasagna:

  • Preheat your oven to 375°F (190°C).
  • In a 9×13-inch baking dish, spread a thin layer of the garlic butter sauce from the shrimp scampi on the bottom.
  • Place a layer of cooked lasagna noodles over the sauce.
  • Spread a portion of the ricotta cheese mixture over the noodles.
  • Add some of the cooked shrimp and a spoonful of the garlic butter sauce over the ricotta layer.
  • Repeat the layers: noodles, ricotta mixture, shrimp, and garlic butter sauce until all the ingredients are used up, finishing with a layer of noodles on top.
  • Pour the heavy cream mixture evenly over the top layer of noodles.
  • Sprinkle the top with shredded mozzarella and Parmesan cheese.

4. Bake:

  • Cover the lasagna with aluminum foil and bake in the preheated oven for 25-30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  • Let the lasagna rest for 10 minutes before slicing.

5. Serve:

  • Garnish with freshly chopped parsley and a sprinkle of Parmesan cheese before serving.
  • Serve with a side of garlic bread or a fresh salad to complete the meal!

Tips:

  • Make ahead: You can prepare the lasagna a day in advance. Just assemble it, cover it, and refrigerate overnight. When ready to bake, allow it to sit at room temperature for 20-30 minutes before baking.
  • Seafood variations: Feel free to mix in other seafood like scallops or crab for even more flavor.
  • Extra garlic: If you’re a garlic lover, feel free to add more minced garlic to the ricotta mixture or sprinkle some extra on top for extra flavor!
