Garlic Butter Steak and Potato Foil Packets

Ingredients:

  • 1 lb steak (ribeye, sirloin, or flank steak), cut into bite-sized pieces
  • 1 lb baby potatoes, quartered (or diced regular potatoes)
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (optional for garnish)
  • 1 tsp dried thyme (optional)
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional)

Instructions:

1. Prepare the Steak and Potatoes:

  • Preheat your grill to medium-high heat, or preheat your oven to 400°F (200°C) if cooking inside.
  • In a bowl, toss the potatoes with 1 tablespoon olive oil (optional), paprika, onion powder, salt, and pepper. Make sure they are well-coated.
  • In a separate bowl, toss the steak pieces with a pinch of salt, pepper, and 1 teaspoon of garlic powder.

2. Make the Garlic Butter Sauce:

  • In a small bowl, melt the butter and mix in the minced garlic, thyme (if using), and parsley. Stir until everything is combined.

3. Assemble the Foil Packets:

  • Cut 4 sheets of aluminum foil (large enough to fold over and seal the ingredients).
  • On each sheet, add a handful of seasoned potatoes and steak pieces.
  • Drizzle each packet generously with the garlic butter sauce.
  • Fold the foil tightly around the potatoes and steak to create a sealed packet.

4. Cook the Foil Packets:

  • On the Grill: Place the foil packets on the grill over medium-high heat. Grill for about 20-25 minutes, flipping the packets halfway through to ensure even cooking. The potatoes should be tender and the steak cooked to your preferred level of doneness.
  • In the Oven: Place the foil packets on a baking sheet and bake for about 25-30 minutes, or until the potatoes are soft and the steak is cooked through.

5. Serve:

  • Carefully open the foil packets (be cautious of the steam!).
  • Garnish with extra parsley if desired and serve immediately!

Tips:

  • Adjust for Doneness: If you like your steak medium-rare, you may want to cut the steak pieces smaller so they cook through quickly.
  • Add Vegetables: Feel free to add veggies like bell peppers, onions, or mushrooms into the packets for extra flavor and variety.
  • Make it Spicy: Add a pinch of red pepper flakes or cayenne pepper to the garlic butter for a little heat.
