Ingredients:
For the Steak:
- 1.5 lbs (680g) sirloin steak (or ribeye), sliced into strips
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp rosemary, chopped
- Salt & black pepper, to taste
For the Potatoes:
- 4 medium Yukon Gold potatoes, diced into ½-inch cubes
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tbsp fresh parsley, chopped
- Salt & pepper, to taste
Optional Garnish:
- Grated Parmesan cheese
- Red pepper flakes
Instructions:
1️⃣ Cook the Potatoes:
- Heat 1 tbsp olive oil and 1 tbsp butter in a large cast-iron skillet over medium heat.
- Add diced potatoes and season with salt, pepper, garlic powder, and onion powder.
- Cook for 12-15 mins, stirring occasionally, until golden and crispy.
- Add minced garlic and parsley, stir for 1 min, then transfer to a plate.
2️⃣ Cook the Steak:
- In the same skillet, heat 1 tbsp olive oil over high heat.
- Season steak strips with paprika, thyme, rosemary, salt, and pepper.
- Sear steak for 2-3 mins per side (for medium-rare) or until desired doneness.
- Add minced garlic in the last 30 seconds and stir.
3️⃣ Combine & Serve:
- Return potatoes to the skillet and toss with the steak.
- Drizzle with remaining butter and garnish with extra parsley, Parmesan, or red pepper flakes.
