Garlic-Herb Roasted Potatoes, Carrots & Green Beans

Serves 4 | Prep 10 mins | Cook 35 mins

Ingredients

  • 1 lb baby potatoes, halved

  • 3 carrots, cut into 1″ chunks

  • 1 cup green beans, trimmed

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

  • 1 tsp thyme

  • ½ tsp smoked paprika

  • Salt & pepper to taste

  • Parmesan (optional, for serving)

Method

  1. Prep – Heat oven to 425°F (220°C). Line a sheet pan.

  2. Season – Toss potatoes & carrots with oil, garlic, herbs, paprika, S&P.

  3. Roast – Spread in single layer. Roast 25 mins.

  4. Add beans – Toss green beans in pan juices. Roast 10 more mins.

  5. Finish – Sprinkle with parmesan if using.

Pro Tips

  • Extra crisp? Soak potatoes in cold water for 30 mins first

  • Meal prep: Roast just potatoes/carrots, add beans when reheating

  • Variation: Swap herbs for lemon zest + oregano

Perfect with: Roast chicken, grilled fish, or as a veggie main!
