Garlic Parmesan Chicken Drumsticks with Potatoes

Crispy, golden drumsticks and tender potatoes roasted in a garlicky Parmesan crust—easy one-pan perfection!

Ingredients

For the Chicken & Potatoes:

  • 8 chicken drumsticks (skin-on for crispiness)
  • 1.5 lbs (700g) baby potatoes, halved (or Yukon golds, quartered)
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme (or rosemary)

For the Garlic Parmesan Coating:

  • ½ cup (50g) grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 tbsp butter, melted
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prep oven & pan: Preheat to 425°F (220°C). Line a baking sheet with parchment.
  2. Season potatoes: Toss potatoes with 2 tbsp olive oil, salt, pepper, paprika, and thyme. Spread on the pan.
  3. Roast potatoes: Bake for 15 mins while you prep the chicken.
  4. Coat chicken: Mix Parmesan, garlic, melted butter, and 1 tbsp olive oil. Rub over drumsticks.
  5. Combine & roast: Add chicken to the pan with potatoes. Bake 30-35 mins until chicken hits 165°F (74°C) and potatoes are tender.
  6. Garnish: Sprinkle with fresh parsley and extra Parmesan.
