Garlic Parmesan Chicken Meatloaf Recipe

Ingredients:

  • 1 lb ground chicken
  • ½ cup breadcrumbs (Panko or regular)
  • ⅓ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 large egg, lightly beaten
  • 3 cloves garlic, minced
  • ½ small onion, finely diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil (for greasing the pan)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or baking dish with olive oil.
  2. Prepare the meatloaf mixture:
    • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, beaten egg, minced garlic, diced onion, Italian seasoning, salt, pepper, and chopped parsley. Mix gently until just combined (avoid overmixing to keep the meatloaf tender).
  3. Shape the meatloaf:
    • Transfer the mixture to the prepared loaf pan and shape it into a loaf. Alternatively, you can shape it into a free-form loaf on a baking sheet.
  4. Bake:
    • Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
  5. Rest and serve:
    • Let the meatloaf rest for 5-10 minutes before slicing. Garnish with additional chopped parsley and grated Parmesan if desired.

Tips:

  • Add a glaze: Brush the top of the meatloaf with a mixture of ketchup, balsamic glaze, or barbecue sauce before baking for extra flavor.
  • Make it ahead: Assemble the meatloaf, cover, and refrigerate for up to 24 hours before baking.
