🍗 Garlic Parmesan Chicken Meatloaf (Gluten-Free)

Ingredients:

For the Meatloaf:

  • 1.5 lbs ground chicken (or turkey)

  • ½ cup gluten-free breadcrumbs (or almond flour for grain-free)

  • ½ cup freshly grated Parmesan cheese

  • ¼ cup finely chopped onion

  • 3 cloves garlic, minced

  • 1 large egg (or flax egg for binding)

  • ¼ cup plain Greek yogurt (or mayo for extra moisture)

  • 1 tbsp Italian seasoning

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional, for smokiness)

For the Glaze (Optional but Recommended!):

  • ¼ cup sugar-free ketchup (or regular)

  • 2 tbsp Parmesan cheese, grated

  • 1 tsp garlic powder

  • 1 tsp dried parsley


👩🍳 Instructions:

1️⃣ Prep: Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
2️⃣ Mix Ingredients: In a large bowl, combine ground chicken, GF breadcrumbs, Parmesan, onion, garlic, egg, yogurt, and all seasonings. Mix gently (don’t overwork it!).
3️⃣ Shape & Bake: Transfer mixture to the loaf pan and smooth the top.
4️⃣ Make Glaze (Optional): Mix ketchup, Parmesan, garlic powder, and parsley. Spread over the top.
5️⃣ Bake: 40-45 mins, or until internal temp reaches 165°F (74°C).
6️⃣ Rest & Serve: Let it rest 10 mins before slicing. Garnish with fresh parsley & extra Parmesan!


💡 Tips for Perfection:

✔ Don’t overmix—keeps it tender!
✔ Add veggies? Try finely diced bell peppers or spinach.
✔ Extra cheesy? Stuff with mozzarella in the middle!
✔ Make it spicy? Add red pepper flakes or a dash of hot sauce.
