Georgia Cracker Salad

A Southern classic that’s crunchy, creamy, and packed with flavor—perfect for potlucks, picnics, or a quick snack!

Ingredients (serves 4-6):

  • 1 sleeve saltine crackers (about 40 crackers), coarsely crushed

  • 3 medium tomatoes, diced (or 1 can diced tomatoes, drained)

  • 3 green onions, thinly sliced

  • 1/2 cup mayonnaise (Duke’s for authenticity!)

  • 2 hard-boiled eggs, chopped

  • 1/2 tsp black pepper

  • 1/4 tsp salt (adjust to taste)

  • 1 tsp sugar (optional, balances acidity)

  • Dash of hot sauce (optional, for a kick)

Instructions (10 mins + chilling):

  1. Crush the saltines—leave some big pieces for texture.

  2. In a large bowl, gently mix tomatoes, green onions, mayo, eggs, pepper, salt, and sugar (if using).

  3. Fold in crushed crackers just before serving to keep them crisp.

  4. Chill 10 mins (or serve immediately for maximum crunch).

Serving Tips:

  • Add-ins: Crispy bacon, diced cucumbers, or pickled jalapeños.

  • Eat fast—the crackers soften over time (it’s still tasty, just less crunchy).

Why it’s a Southern staple: Cheap, quick, and weirdly addictive. “You’ll scoff, then go back for thirds.” 😋

Pair with: Fried chicken, BBQ, or eat straight from the bowl with a spoon!
