Georgia Cracker Salad
A Southern classic that’s crunchy, creamy, and packed with flavor—perfect for potlucks, picnics, or a quick snack!
Ingredients (serves 4-6):

1 sleeve saltine crackers (about 40 crackers), coarsely crushed

3 medium tomatoes, diced (or 1 can diced tomatoes, drained)

3 green onions, thinly sliced

1/2 cup mayonnaise (Duke’s for authenticity!)

2 hard-boiled eggs, chopped

1/2 tsp black pepper

1/4 tsp salt (adjust to taste)

1 tsp sugar (optional, balances acidity)

Dash of hot sauce (optional, for a kick)
Instructions (10 mins + chilling):

Crush the saltines—leave some big pieces for texture.

In a large bowl, gently mix tomatoes, green onions, mayo, eggs, pepper, salt, and sugar (if using).

Fold in crushed crackers just before serving to keep them crisp.

Chill 10 mins (or serve immediately for maximum crunch).
