Family German Chocolate Cake

Ingredients:

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 4 oz German sweet chocolate, chopped

For the Coconut-Pecan Frosting:

  • 1 cup chopped pecans
  • 1 cup sweetened shredded coconut
  • 1 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1/2 cup unsalted butter
  • 3 large egg yolks
  • 1 teaspoon vanilla extract

Instructions:

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large bowl, combine the flour, granulated sugar, brown sugar, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  • Melt the German sweet chocolate in the boiling water, then stir it into the batter until fully combined.
  • Divide the batter evenly among the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then remove and transfer to wire racks to cool completely.

2. Make the Coconut-Pecan Frosting:

  • In a medium saucepan, combine the sugar, evaporated milk, butter, egg yolks, and vanilla extract. Cook over medium heat, stirring constantly until the mixture thickens (about 10-12 minutes).
  • Remove from heat and stir in the chopped pecans and shredded coconut. Let it cool to room temperature.

3. Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of the coconut-pecan frosting on top.
  • Repeat with the second layer, adding more frosting, and then place the third layer on top.
  • Frost the top and sides of the cake with any remaining coconut-pecan frosting.

Tips:

  • Storage: Store the cake in an airtight container at room temperature for up to 3 days.
  • Decoration: You can garnish the top with additional pecans or coconut if desired.
