Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

For the Topping:

  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped pecans (or walnuts if preferred)
  • 1/2 cup sweetened condensed milk
  • 1/4 cup butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon vanilla extract

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan (or any cake pan of your choice).

2. Make the cake batter:

  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.

3. Bake the cake:

  • Pour the cake batter into the prepared cake pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

4. Prepare the topping:

  • While the cake is cooling, make the topping. In a small saucepan, melt the butter over medium heat.
  • Stir in the brown sugar, sweetened condensed milk, and vanilla extract. Bring to a simmer and cook for 2-3 minutes, stirring constantly.
  • Remove from heat and stir in the shredded coconut and chopped pecans.

5. Assemble the cake:

  • Once the cake has cooled completely, spread the coconut-pecan topping generously over the cake.

6. Add sprinkles:

  • Finish by adding colorful sprinkles on top of the topping for a fun and festive touch.

7. Serve and enjoy:
