German Chocolate Whoopie Pies are a delicious twist on the classic whoopie pie, combining rich chocolate cookies with a creamy coconut-pecan filling. Here’s how you can make them:

German Chocolate Whoopie Pies

Ingredients:

For the Chocolate Cookies:

  • 1 box chocolate cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs

For the Coconut-Pecan Filling:

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions:

1. Make the chocolate cookies:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the chocolate cake mix, vegetable oil, and eggs. Stir until the dough is smooth and well-combined.
  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a spoon or your hands to shape them into round mounds.
  • Bake for 8-10 minutes or until the edges are set and the tops look firm. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

2. Make the coconut-pecan filling:

  • In a medium saucepan, combine the evaporated milk, granulated sugar, and egg yolks. Cook over medium heat, stirring constantly to avoid curdling.
  • Once the mixture begins to thicken (about 8-10 minutes), add the butter and stir until it melts and is fully incorporated.
  • Stir in the vanilla extract, shredded coconut, and chopped pecans. Continue to cook for an additional 2-3 minutes, then remove from heat.
  • Let the filling cool to room temperature. It will continue to thicken as it cools.

3. Assemble the whoopie pies:

  • Once both the cookies and filling have cooled, take one cookie and spread a generous amount of the coconut-pecan filling on the flat side.
  • Top with another cookie, flat side down, to create a sandwich. Repeat with the remaining cookies and filling.

4. Serve and enjoy:

  • Serve your German Chocolate Whoopie Pies immediately, or store them in an airtight container at room temperature for up to 3 days.
