Ingredients:
- 2 pounds potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground nutmeg
- Vegetable oil for frying
- Applesauce or sour cream for serving (optional)
Instructions:
- Prepare Potatoes and Onion: Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Grate the onion.
- Combine Ingredients: In a large mixing bowl, combine the grated potatoes, grated onion, eggs, flour, salt, pepper, and nutmeg. Mix well to combine.
- Heat Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
- Form Pancakes: Scoop about 1/4 cup of the potato mixture and flatten it into a pancake shape. Carefully place it in the hot oil. Repeat with the remaining mixture, frying a few pancakes at a time without overcrowding the pan.
- Fry Pancakes: Fry the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Transfer the cooked pancakes to a paper towel-lined plate to drain any excess oil. Repeat with the remaining potato mixture.
- Serve: Serve the potato pancakes hot, with applesauce or sour cream on the side if desired.
