GF Green Chile Cheese Bread 🌶️🧀

This gluten-free savory bread is packed with melty cheese, roasted green chiles, and a hint of spice—perfect as a side for soups, chili, or enjoyed on its own!

Ingredients

  • 1 ½ cups gluten-free all-purpose flour blend (with xanthan gum, or add 1 tsp)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 1 cup shredded sharp cheddar cheese (plus extra for topping)

  • ½ cup shredded Monterey Jack or pepper jack cheese

  • ½ cup canned diced green chiles (drained, or roasted & peeled fresh Hatch chiles)

  • 1 large egg (or flax egg for vegan)

  • 1 cup buttermilk (*or dairy-free milk + 1 tbsp lemon juice*)

  • ¼ cup melted butter or oil (or dairy-free alternative)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and onion powder.

  3. Add cheese & chiles: Stir in cheddar, Monterey Jack, and green chiles until coated in flour.

  4. Combine wet ingredients: In another bowl, whisk egg, buttermilk, and melted butter.

  5. Mix batter: Pour wet ingredients into dry, stirring just until combined (don’t overmix).

  6. Bake: Transfer to the loaf pan, top with extra cheese, and bake 45–55 mins until golden and a toothpick comes out clean.

  7. Cool & serve: Let rest 10 mins before slicing. Best warm!

Variations

  • Spicier: Add diced jalapeños or a pinch of cayenne.

  • Dairy-free: Use vegan cheese + dairy-free milk/butter.

  • Herb twist: Fold in chopped cilantro or green onions.
