Ingredients

1 ½ cups gluten-free all-purpose flour blend (with xanthan gum, or add 1 tsp)

1 cup shredded sharp cheddar cheese (plus extra for topping)

½ cup shredded Monterey Jack or pepper jack cheese

½ cup canned diced green chiles (drained, or roasted & peeled fresh Hatch chiles)

1 large egg (or flax egg for vegan)

1 cup buttermilk (*or dairy-free milk + 1 tbsp lemon juice*)

¼ cup melted butter or oil (or dairy-free alternative)
Instructions

Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and onion powder.

Add cheese & chiles: Stir in cheddar, Monterey Jack, and green chiles until coated in flour.

Combine wet ingredients: In another bowl, whisk egg, buttermilk, and melted butter.

Mix batter: Pour wet ingredients into dry, stirring just until combined (don’t overmix).

Bake: Transfer to the loaf pan, top with extra cheese, and bake 45–55 mins until golden and a toothpick comes out clean.
