Gluten-Free Big Mama’s Cinnamon Roll Cake 🍥✨

All the gooey, buttery, cinnamon-swirled goodness of the classic—but 100% gluten-free! This easy coffee cake tastes like a giant cinnamon roll without the fuss of yeast or rolling. Perfect for breakfast, brunch, or dessert.


Ingredients

For the Cake:

  • 3 cups gluten-free 1:1 flour blend (like King Arthur or Bob’s Red Mill, with xanthan gum)

  • 1 cup granulated sugar

  • 4 tsp baking powder (ensure GF)

  • 1½ cups milk (dairy or non-dairy)

  • 2 large eggs (or flax eggs for vegan)

  • 2 tsp vanilla extract

  • ½ cup (1 stick) butter, melted (or dairy-free alternative)

For the Cinnamon Swirl:

  • 1 cup (2 sticks) butter, softened (or dairy-free butter)

  • 1 cup packed brown sugar

  • 2 tbsp gluten-free flour

  • 2 tbsp cinnamon

For the Glaze:

  • 2 cups powdered sugar (ensure GF)

  • 5 tbsp milk (or heavy cream/non-dairy milk)

  • 1 tsp vanilla extract


Instructions

1. Make the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. In a bowl, whisk GF flour, sugar, and baking powder.

  3. Add milk, eggs, vanilla, and melted butter. Mix until just combined (don’t overmix—GF batter thickens as it sits).

  4. Pour into the prepared pan.

2. Add the Cinnamon Swirl

  1. In a separate bowl, mix softened butter, brown sugar, GF flour, and cinnamon until crumbly.

  2. Drop spoonfuls over the cake batter, then use a knife to swirl gently into the batter.

3. Bake

  • Bake for 35–40 minutes, until a toothpick comes out clean (GF cakes often need extra time).

4. Glaze & Serve

  1. Whisk together powdered sugar, milk, and vanilla until smooth.

  2. Drizzle over the warm cake.
