📝 Ingredients

For the Oat Crumble Layers:

  • 1 cup gluten-free all-purpose flour (like King Arthur Measure for Measure)

  • 1 cup gluten-free old-fashioned rolled oats

  • ¾ cup packed brown sugar

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¾ cup cold unsalted butter, cubed (or dairy-free butter)

For the Caramel-Chocolate Filling:

  • 1 cup soft caramel candies (like Werther’s Soft Caramels, check for GF labels)

  • ¼ cup heavy cream (or full-fat coconut milk for dairy-free)

  • 1 cup semisweet chocolate chips (ensure GF certified)

  • ½ tsp flaky sea salt (optional, for topping)


👩‍🍳 Instructions

1. Prep & Preheat:

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

2. Make the Crumble:

  1. In a bowl, whisk GF flour, oats, brown sugar, baking soda, and salt.

  2. Cut in cold butter with a pastry cutter (or pulse in a food processor) until the mixture resembles coarse crumbs.

3. Layer & Bake:

  1. Press half the crumble mixture firmly into the pan. Bake for 10 mins until lightly golden.

  2. Meanwhile, melt caramels and cream in a saucepan over low heat, stirring until smooth.

  3. Sprinkle chocolate chips over the baked crust. Pour warm caramel evenly on top.

  4. Crumble the remaining oat mixture over the caramel.

4. Bake Again & Cool:

  • Bake for 15 more mins until bubbly and golden.

  • Cool completely (2+ hours) before slicing—this ensures clean cuts!

5. Serve:

  • Sprinkle with flaky salt if desired. Cut into squares and enjoy!
