Gluten-Free Christmas Paraline Bark

🍫 Ingredients

1 ½ cups sugar (or coconut sugar for deeper flavor)

1 ½ cups mixed nuts (almonds, pecans, hazelnuts – chopped)

¼ tsp sea salt

½ tsp vanilla extract (or 1 tsp cinnamon for warmth)

1 ½ cups dark or milk chocolate chips (use dairy-free if needed)

Optional: Dried cranberries, crushed candy canes, or edible glitter for decor
📝 Instructions
1. Make the Paraline (Caramelized Nuts)

Line a baking sheet with parchment paper (grease lightly).

In a heavy saucepan, mix sugar + water. Cook on medium-high without stirring until it turns golden amber (~10-12 mins).

Remove from heat, quickly stir in nuts, salt, and vanilla (be careful—it’s hot!).

Pour onto the sheet, spread thin, and let cool completely (it’ll harden like brittle).
2. Assemble the Bark

Break the paraline into shards.

Melt chocolate (microwave or double boiler), then spread half on a new parchment-lined tray.

Scatter paraline shards over the chocolate, then drizzle the rest of the melted chocolate on top.

Add holiday toppings (cranberries, peppermint, etc.) and chill 1 hour until set.
3. Crack & Serve!
