For the Pasta & Chicken:

  • 1 lb gluten-free spaghetti (or brown rice/quinoa pasta)

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tbsp olive oil

  • 2 tbsp Cajun seasoning (adjust for spice level)

  • 1 tsp garlic powder

  • ½ tsp salt

For the Garlic Mozzarella Sauce:

  • 4 tbsp butter (or dairy-free alternative)

  • 4 cloves garlic, minced

  • 3 cups whole milk (or unsweetened almond milk)

  • 1 cup chicken broth

  • 8 oz cream cheese, softened (or dairy-free cream cheese)

  • 2 cups shredded mozzarella, divided

  • ½ cup grated Parmesan cheese (or nutritional yeast for dairy-free)

  • ¼ tsp black pepper

  • Optional: ½ tsp red pepper flakes for heat

Garnish:

  • Fresh parsley or basil

👩‍🍳 Instructions

1. Cook the Pasta & Chicken:

  1. Cook GF spaghetti al dente (per package instructions). Drain and set aside.

  2. Toss chicken with Cajun seasoning, garlic powder, and salt.

  3. Heat olive oil in a large skillet over medium-high. Cook chicken until browned (5-6 mins). Remove and set aside.

2. Make the Sauce:

  1. In the same skillet, melt butter over medium heat. Sauté garlic until fragrant (~1 min).

  2. Whisk in milk and broth, then add cream cheese. Stir until smooth.

  3. Reduce heat to low. Add 1½ cups mozzarella and Parmesan, stirring until melted. Season with pepper (and red pepper flakes if using).

3. Combine & Bake (Optional for Extra Meltiness!):

  1. Preheat broiler. Toss pasta, chicken, and sauce in an oven-safe dish. Top with remaining ½ cup mozzarella.

  2. Broil 2-3 mins until bubbly and golden.
