Gluten-Free Depression-Era Chocolate Cake (GF Crazy Cake)
A naturally egg-free, dairy-free chocolate cake made frugal during the Great Depression—now updated to be gluten-free but just as simple and delicious!

Ingredients
*(For an 8×8-inch or 9×9-inch pan)*

1½ cups gluten-free 1:1 flour blend (like Bob’s Red Mill or King Arthur)

1 cup granulated sugar
-
¼ cup unsweetened cocoa powder
-
1 tsp baking soda
-
½ tsp salt
-
1 tsp white vinegar (or apple cider vinegar)

1 tsp vanilla extract
-
⅓ cup vegetable oil (or melted coconut oil)

1 cup cold water (or cold coffee for deeper flavor)
Optional Add-Ins:

½ cup dairy-free chocolate chips
-
1 tsp instant espresso powder (enhances chocolate flavor)
Instructions
1. Dump & Mix (Right in the Pan!)

In an ungreased 8×8-inch or 9×9-inch baking pan, whisk together:

GF flour, sugar, cocoa powder, baking soda, and salt until no lumps remain.

2. Make Three Wells

Use a spoon to create three small holes in the dry mix:

1st well: Pour in vinegar.

2nd well: Pour in vanilla.
-
3rd well: Pour in oil.

3. Add Water & Stir

Pour cold water (or coffee) over everything and stir just until combined (don’t overmix).

(Optional: Fold in chocolate chips.)
4. Bake

Bake at 350°F (175°C) for 30–35 minutes, until a toothpick comes out clean.
5. Cool & Serve

Let cool completely before slicing (GF cakes are fragile when warm).

Dust with powdered sugar or drizzle with dairy-free ganache (see note below).
GF Tips
✅ Best GF flour blends: Use one with xanthan gum (or add ½ tsp if yours doesn’t have it).
✅ Avoid overmixing – GF batters can get gummy if stirred too much.
✅ For cupcakes: Bake 18–20 mins (makes ~12).
Dairy-Free “Ganache” Topping (Optional)

Heat ½ cup dairy-free chocolate chips + 2 tbsp coconut milk in 30-sec bursts until melted. Drizzle over cake.
