Here’s a delicious recipe for a Gluten-Free Eater’s Swirl Pie, perfect for anyone with gluten sensitivities or preferences. This pie features a rich, creamy filling with a swirl of chocolate or fruit puree, set in a gluten-free crust.

Gluten-Free Eater’s Swirl Pie Recipe

Ingredients:

For the Crust:

  • 1 ½ cups gluten-free graham cracker crumbs (make sure they’re gluten-free)
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted (or coconut oil for a dairy-free option)

For the Swirl Filling:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • ½ tsp vanilla extract
  • ¼ cup cocoa powder (for chocolate swirl) OR ½ cup fruit puree (like raspberry, strawberry, or blueberry) for fruit swirl
  • Optional: 2 tbsp powdered sugar for sweetening the fruit puree, depending on how tart it is

Instructions:

  1. Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, combine the gluten-free graham cracker crumbs and sugar.
    • Pour in the melted butter and mix until everything is well-coated and the mixture has a wet sand-like texture.
    • Press the mixture into the bottom and sides of a 9-inch pie pan to form the crust.
    • Bake the crust for 8-10 minutes, until it’s golden brown and set. Once done, remove from the oven and let it cool while you prepare the filling.
  2. Make the Swirl Filling:

    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Add the heavy cream, granulated sugar, and vanilla extract. Continue beating on medium-high speed until the mixture is light and fluffy.
    • If making a chocolate swirl: Mix in the cocoa powder until fully incorporated.
    • If making a fruit swirl: In a small bowl, mix the fruit puree with powdered sugar (if desired). Stir this into the cream cheese mixture, blending until smooth.
  3. Swirl the Filling:

    • Pour the cream cheese filling into the cooled gluten-free graham cracker crust. Use a spatula to smooth the top.
    • If making a chocolate swirl, drop spoonfuls of the chocolate mixture over the cream cheese filling and use a toothpick or knife to swirl it throughout the filling. Do the same for the fruit puree, swirling it in a pattern you like.
  4. Chill the Pie:

    • Cover the pie and refrigerate it for at least 4 hours or overnight to allow the filling to set properly.
  5. Serve:

    • After chilling, slice the pie and serve it chilled. You can garnish it with whipped cream or fresh fruit if you like!
