Gluten-Free French Butter Cake

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened (or dairy-free butter)

  • 1 cup granulated sugar

  • 4 large eggs, room temperature

  • 1 tsp vanilla extract

  • ½ tsp almond extract (optional, for depth)

  • 1½ cups gluten-free flour blend (like King Arthur Measure for Measure)

  • ½ tsp xanthan gum (omit if blend includes it)

  • 1 tsp baking powder

  • ¼ tsp salt

  • ⅓ cup whole milk (or almond milk)

For the Topping:

  • 1 tbsp coarse sugar (for crunch)

  • Powdered sugar (for dusting)

1. Prep & Preheat:

  1. Preheat oven to 325°F (160°C). Grease a 9-inch round cake pan and line the bottom with parchment.

  2. Whisk GF flour, xanthan gum, baking powder, and salt in a bowl.

2. Cream Butter & Sugar:

  1. Beat butter and sugar until light and fluffy (~3 mins).

  2. Add eggs one at a time, then vanilla and almond extract.

3. Add Dry Ingredients:

  1. Alternate adding flour mixture and milk in 3 batches, mixing until just combined.

4. Bake:

  1. Pour batter into the pan. Sprinkle with coarse sugar.

  2. Bake 40-45 mins until golden and a toothpick comes out clean.

  3. Cool 15 mins in the pan, then transfer to a rack.

5. Serve:

Dust with powdered sugar and enjoy with fresh berries or whipped cream!
