Gluten-Free Italian Love Cake

Ingredients

For the Ricotta Layer:

2 lbs (32 oz) whole-milk ricotta cheese

¾ cup sugar

4 large eggs

1 tsp vanilla extract

¼ tsp salt
For the Topping:

1 box (3.4 oz) instant chocolate pudding mix (ensure GF, like Jell-O)

1½ cups cold milk (dairy or non-dairy)

1 cup heavy cream (or coconut cream for dairy-free)

1 tbsp powdered sugar

Chocolate shavings or cocoa powder for garnish
Instructions
1. Prep & Preheat

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
2. Make the Cake Layer

Prepare the GF chocolate cake mix according to package instructions.

Pour batter into the prepared pan and smooth the top (it will be thin).
3. Make the Ricotta Layer

In a blender or mixer, combine ricotta, sugar, eggs, vanilla, and salt until smooth.

Gently pour over the cake batter (do not mix—they’ll switch places while baking!).
4. Bake

Bake 60–70 minutes, until the center is set and a toothpick comes out clean.

Let cool completely (it will sink slightly—that’s normal!).
5. Add the Topping

Whisk pudding mix + milk for 2 minutes; let thicken 5 minutes.

Whip cream + powdered sugar to stiff peaks; fold into pudding.

6. Serve
