Gluten-Free Italian Love Cake

A decadent, layered dessert with chocolate cake, creamy ricotta filling, and fluffy pudding topping—now gluten-free but just as indulgent!


Why It’s Called “Love Cake”

Ingredients

For the Chocolate Cake Layer:

  • 1 box (15 oz) gluten-free chocolate cake mix (like King Arthur or Betty Crocker GF)

  • Ingredients listed on the box (usually eggs, oil, water)

For the Ricotta Layer:

  • 2 lbs (32 oz) whole-milk ricotta cheese

  • ¾ cup sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • ¼ tsp salt

For the Topping:

  • 1 box (3.4 oz) instant chocolate pudding mix (ensure GF, like Jell-O)

  • 1½ cups cold milk (dairy or non-dairy)

  • 1 cup heavy cream (or coconut cream for dairy-free)

  • 1 tbsp powdered sugar

  • Chocolate shavings or cocoa powder for garnish


Instructions

1. Prep & Preheat

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

2. Make the Cake Layer

  • Prepare the GF chocolate cake mix according to package instructions.

  • Pour batter into the prepared pan and smooth the top (it will be thin).

3. Make the Ricotta Layer

  • In a blender or mixer, combine ricotta, sugar, eggs, vanilla, and salt until smooth.

  • Gently pour over the cake batter (do not mix—they’ll switch places while baking!).

4. Bake

  • Bake 60–70 minutes, until the center is set and a toothpick comes out clean.

  • Let cool completely (it will sink slightly—that’s normal!).

5. Add the Topping

  • Whisk pudding mix + milk for 2 minutes; let thicken 5 minutes.

  • Whip cream + powdered sugar to stiff peaks; fold into pudding.

  • Spread over cooled cake and chill 4+ hours (or overnight).

6. Serve

  • Garnish with chocolate shavings or dust with cocoa powder.


Tips & Variations

🌿 Dairy-free? Use dairy-free ricotta (like Kite Hill), coconut cream, and almond milk.
🍫 Extra chocolatey? Add ½ cup chocolate chips to the ricotta layer.
🍓 Fruity twist: Top with fresh berries or a strawberry glaze.
