Gluten-Free Lazy Day Lemon Cream Pie Bars 🍋

No baking required! Just 15 minutes of prep for a creamy, zesty, dreamy dessert.

🍪 Crust Ingredients:

  • 1 ½ cups gluten-free graham cracker crumbs (or crushed GF cookies)

  • ¼ cup melted butter (or coconut oil for dairy-free)

  • 2 tbsp granulated sugar (or monk fruit sweetener for lower sugar)

🍋 Filling Ingredients:

  • 1 (14 oz) can sweetened condensed milk (or coconut condensed milk for dairy-free)

  • ¾ cup fresh lemon juice (about 3-4 lemons)

  • 1 tbsp lemon zest

  • 1 (8 oz) tub whipped topping (like Cool Whip, or coconut whipped cream)

  • Optional: ½ tsp turmeric (for brighter yellow color)

Topping Ideas:

  • Extra whipped cream

  • Lemon slices

  • Toasted coconut

  • Fresh berries


📝 Instructions:

  1. Make the crust:

    • Mix GF crumbs, melted butter, and sugar. Press firmly into an 8×8 pan lined with parchment.

    • Chill in the freezer for 10 minutes while you prep the filling.

  2. Make the filling:

    • In a bowl, whisk condensed milk, lemon juice, and zest until smooth.

    • Gently fold in whipped topping until fully combined (no streaks).

  3. Assemble & chill:

    • Pour filling over the crust and smooth the top.

    • Refrigerate at least 4 hours (or overnight) until set.

  4. Slice & serve!

    • Cut into squares and add toppings.
