Ingredients

For the Crust:

  • 1 ½ cups (180g) gluten-free 1:1 flour blend (like King Arthur or Bob’s Red Mill)

  • ⅓ cup (65g) brown sugar

  • ½ cup (115g) cold butter (or vegan butter), cubed

  • ¼ tsp salt

For the Filling:

  • ¾ cup (150g) brown sugar

  • ½ cup (120ml) pure maple syrup or corn syrup

  • ⅓ cup (75g) melted butter (or coconut oil)

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 2 cups (200g) pecans, roughly chopped

Instructions

1. Prep & Preheat

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper (or grease well).

2. Make the Crust

  • In a food processor, pulse GF flour, brown sugar, cold butter, and salt until crumbly (or mix by hand with a fork).

  • Press firmly into the pan to form an even layer.

  • Bake for 12-15 mins until lightly golden.

3. Make the Filling

  • Whisk together brown sugar, maple syrup, melted butter, eggs, vanilla, and salt until smooth.

  • Stir in pecans, then pour over the baked crust.

4. Bake Again

  • Bake for 25-30 mins until the filling is set (center should jiggle slightly).

  • Let cool completely (1-2 hours) before slicing—this is key for clean cuts!

5. Slice & Serve

  • Lift out using parchment paper, then cut into squares.

  • Optional: Dust with powdered sugar or drizzle with melted chocolate.
