Gluten-Free Lemon Syllabub
A light, citrusy, and luxuriously creamy dessert that’s naturally gluten-free—perfect for a refreshing finish to any meal!
Ingredients (Serves 4–6):

1 cup heavy cream (very cold, or coconut cream for dairy-free)

½ cup dry white wine (or GF sherry/vermouth; omit for alcohol-free*)

¼ cup granulated sugar (or caster sugar for smoother texture)

Zest & juice of 1 large lemon (about 3 tbsp juice)

1 tsp vanilla extract (ensure GF)

1 tbsp limoncello (GF-certified)

½ tsp cardamom or lavender for floral notes

Instructions:

Infuse the wine mixture:

In a bowl, whisk wine, sugar, lemon zest, and lemon juice until sugar dissolves. Let sit 10 minutes to meld flavors.

Whip the cream:

In a chilled bowl, whip cold cream to soft peaks.

Gradually fold in the wine mixture (add limoncello or vanilla here if using) until just combined—keep it fluffy!
