Gluten-Free Lemon Syllabub

A light, citrusy, and luxuriously creamy dessert that’s naturally gluten-free—perfect for a refreshing finish to any meal!

Ingredients (Serves 4–6):

  • 1 cup heavy cream (very cold, or coconut cream for dairy-free)

  • ½ cup dry white wine (or GF sherry/vermouth; omit for alcohol-free*)

  • ¼ cup granulated sugar (or caster sugar for smoother texture)

  • Zest & juice of 1 large lemon (about 3 tbsp juice)

  • 1 tsp vanilla extract (ensure GF)

  • Optional add-ins:

    • 1 tbsp limoncello (GF-certified)

    • ½ tsp cardamom or lavender for floral notes

Instructions:

  1. Infuse the wine mixture:

    • In a bowl, whisk wine, sugar, lemon zest, and lemon juice until sugar dissolves. Let sit 10 minutes to meld flavors.

  2. Whip the cream:

    • In a chilled bowl, whip cold cream to soft peaks.

    • Gradually fold in the wine mixture (add limoncello or vanilla here if using) until just combined—keep it fluffy!

  3. Chill & serve:

    • Spoon into glasses or ramekins and refrigerate 1–4 hours (the longer it chills, the firmer it sets).

    • Garnish with fresh berries, edible flowers, or GF shortbread crumbs.

GF & Allergy Swaps:

  • Dairy-free: Use coconut cream (chilled overnight, discard liquid) + 1 tbsp powdered sugar.

  • Alcohol-free: Replace wine with sparkling apple cider or lemonade.

  • Lower sugar: Swap in monk fruit sweetener 1:1.
