Gluten-Free Monterey Sausage Pie

A delicious, hearty dish combining spicy sausage, creamy Monterey Jack cheese, and a gluten-free crust—perfect for breakfast, brunch, or dinner!

Ingredients:

  • Crust:

    • 1 ½ cups gluten-free flour blend (like Bob’s Red Mill 1:1)

    • ½ tsp xanthan gum (if not included in flour)

    • ½ tsp salt

    • 6 tbsp cold butter (or dairy-free alternative)

    • 4-6 tbsp ice water

  • Filling:

    • 1 lb ground sausage (spicy or mild)

    • 1 small onion, diced

    • 1 bell pepper, diced

    • 3 eggs

    • ½ cup milk (or dairy-free milk)

    • 1 ½ cups shredded Monterey Jack cheese

    • ½ tsp garlic powder

    • Salt & pepper to taste

    • Optional: diced jalapeños for heat

Instructions:

  1. Prepare the crust:

    • Mix GF flour, xanthan gum (if needed), and salt. Cut in cold butter until crumbly.

    • Gradually add ice water until dough forms. Roll out and press into a pie dish. Pre-bake at 375°F (190°C) for 10 mins.

  2. Cook the filling:

    • Brown sausage in a skillet, then add onions and peppers until soft. Drain excess fat.

    • Whisk eggs, milk, garlic powder, salt, and pepper in a bowl.

  3. Assemble & bake:

    • Spread sausage mixture into the crust, sprinkle with cheese, then pour egg mixture over it.

    • Bake at 375°F (190°C) for 30-35 mins, until set and golden.

  4. Serve: Let cool slightly before slicing. Great with salsa or sour cream!
