🍑🥮 GF Peach Cobbler Cheesecake (Two Desserts in One!)

This gluten-free dessert combines the juicy, spiced warmth of peach cobbler with the creamy richness of cheesecake—all in one stunning bake! Perfect for summer gatherings or cozy fall nights.

📝 Ingredients

For the Crust:

  • 1½ cups gluten-free graham cracker crumbs (or almond flour + 2 tbsp sugar)

  • 6 tbsp melted butter (or coconut oil)

  • ½ tsp cinnamon

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

For the Peach Cobbler Layer:

  • 3 cups fresh peaches, sliced (or thawed frozen)

  • ¼ cup brown sugar

  • 1 tbsp lemon juice

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 tbsp cornstarch (or tapioca starch)

For the Crumble Topping:

  • ½ cup gluten-free flour

  • ¼ cup rolled oats (certified GF)

  • ¼ cup brown sugar

  • 3 tbsp cold butter, cubed


👩🍳 Instructions

1️⃣ Prep the Crust

  1. Mix crumbs, melted butter, and cinnamon. Press into a 9-inch springform pan.

  2. Bake at 325°F (165°C) for 8 mins, then cool.

2️⃣ Make the Cheesecake

  1. Beat cream cheese and sugar until smooth.

  2. Add eggs, vanilla, and sour cream; mix until creamy.

  3. Pour over crust.

3️⃣ Cook the Peach Filling

  1. Toss peaches, brown sugar, lemon juice, spices, and cornstarch in a saucepan.

  2. Simmer 5 mins until thickened. Cool slightly, then spoon over cheesecake batter.

4️⃣ Add Crumble & Bake

  1. Combine GF flour, oats, brown sugar, and butter into crumbs. Sprinkle over peaches.

  2. Bake 40-45 mins until center is slightly wobbly.

  3. Cool 1 hour, then refrigerate 4+ hours.
