Gluten-Free Pineapple Coconut Dream Cake

Ingredients:

For the Cake:

  • 1 ½ cups gluten-free all-purpose flour blend (with xanthan gum)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup coconut oil (melted) or unsalted butter

  • ¾ cup coconut sugar (or granulated sugar)

  • 2 large eggs (or flax eggs for vegan)

  • 1 tsp vanilla extract

  • ½ cup coconut milk (canned, full-fat for richness)

  • ½ cup crushed pineapple (drained but reserve juice)

  • ½ cup shredded coconut (unsweetened or sweetened)

For the Pineapple Coconut Frosting:

  • 8 oz cream cheese (or dairy-free alternative), softened

  • ¼ cup unsalted butter (or coconut oil), softened

  • 2 cups powdered sugar (or powdered erythritol for sugar-free)

  • 2-3 tbsp reserved pineapple juice

  • ½ tsp vanilla extract

  • ½ cup shredded coconut (for topping)

Optional Add-Ins:

  • Toasted coconut flakes for garnish

  • Pineapple slices for decoration

  • A splash of rum or coconut rum in the batter (for an adult version)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan or line with parchment paper.

  2. Mix dry ingredients: In a bowl, whisk GF flour, baking powder, baking soda, and salt.

  3. Cream wet ingredients: In another bowl, beat coconut oil and sugar until smooth. Add eggs, vanilla, and coconut milk. Mix well.

  4. Combine: Gradually add dry ingredients to wet, mixing until just combined. Fold in crushed pineapple and shredded coconut.

  5. Bake: Pour into the pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool.

  6. Make frosting: Beat cream cheese and butter until smooth. Add powdered sugar, pineapple juice, and vanilla. Adjust consistency with more juice if needed.

  7. Assemble: Frost the cooled cake and sprinkle with shredded coconut. Garnish with toasted coconut or pineapple slices.
