Gluten-Free Pineapple Fluff

A retro-inspired, light & creamy dessert with tropical vibes! Only 4 ingredients, naturally GF, and ready in 5 minutes.


Ingredients (serves 6):

  • 1 (20 oz) can crushed pineapple (in juice, not drained)

  • 1 (3.4 oz) box instant vanilla pudding mix (ensure GF-certified)

  • 2 cups (16 oz) whipped topping (Cool Whip or coconut whipped cream)

  • 1 cup mini marshmallows (optional, for texture)

(Optional add-ins: toasted coconut, maraschino cherries, or chopped pecans!)


Instructions *(5 mins + chill time)*:

  1. Mix pudding & pineapple

    • In a large bowl, whisk dry pudding mix into undrained pineapple (juice replaces milk!). Let thicken 2 mins.

  2. Fold in fluff

    • Gently stir in whipped topping and marshmallows (if using).

  3. Chill & serve

    • Refrigerate 1 hour (or enjoy immediately as a mousse!).

    • Top with toasted coconut or berries for flair.


Tips & Twists:

  • Dairy-free? Use coconut whipped cream & GF vanilla pudding.

  • Extra fluff? Fold in ½ cup cottage cheese for protein.

  • Lighter version? Swap whipped topping for Greek yogurt.
