Here’s a delicious gluten-free Poolside Dip that’s safe for celiacs and gluten-sensitive guests – creamy, flavorful, and perfect with chips or veggies!

Gluten-Free Poolside Dip 🏊‍♀️🌮

Ingredients:

  • 2 (10 oz) cans rotisserie chicken (drained, gluten-free certified)

  • 8 oz cream cheese (softened)

  • 1 cup shredded cheddar cheese

  • 1/2 cup gluten-free ranch dressing (or 1/2 cup mayo + 1 tbsp GF ranch seasoning)

  • 1/4 cup diced red onion

  • 1/4 cup diced bell peppers

  • 1/4 cup pickled jalapeños (optional, for spice)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper to taste

For Serving:

  • Gluten-free tortilla chips (like Siete or Late July)

  • Veggie sticks (celery, carrots, cucumbers)


Instructions:

1️⃣ Mix the Base:

  • In a bowl, combine cream cheese, ranch dressing, garlic powder, onion powder, salt & pepper until smooth.

2️⃣ Add the Good Stuff:

  • Fold in chicken, cheddar cheese, red onion, bell peppers, and jalapeños.

3️⃣ Chill & Serve:

  • Cover and refrigerate at least 1 hour (best flavor!).

  • Serve with GF chips or fresh veggies.
