Gluten-Free Ring-a-Ling Sweet Rolls

A festive, pull-apart cinnamon roll wreath—soft, gooey, and perfect for holidays or brunch!

📝 Ingredients

For the Dough:

  • 3 cups gluten-free flour blend (like King Arthur Measure for Measure)

  • ¼ cup granulated sugar

  • 1 packet (2¼ tsp) instant yeast

  • 1 tsp xanthan gum (omit if your blend has it)

  • ½ tsp salt

  • ½ cup warm milk (110°F, dairy or non-dairy)

  • 2 large eggs, room temp

  • ¼ cup unsalted butter, melted (or coconut oil)

  • 1 tsp vanilla extract

For the Filling:

  • ¼ cup softened butter

  • ½ cup brown sugar, packed

  • 1½ tbsp cinnamon

  • ½ cup chopped pecans or raisins (optional)

For the Icing:

  • 1 cup powdered sugar

  • 2 tbsp milk or cream

  • ½ tsp vanilla extract


👩‍🍳 Instructions

1. Make the Dough:

  1. Whisk GF flour, sugar, yeast, xanthan gum, and salt in a bowl.

  2. Add warm milk, eggs, melted butter, and vanilla. Mix until a sticky dough forms.

  3. Knead by hand (or mixer with paddle) for 3-4 mins until smooth. Let rest 10 mins.

2. Roll & Fill:

  1. On parchment paper, pat dough into a 12×18-inch rectangle (dust with GF flour if sticky).

  2. Spread softened butter, then sprinkle brown sugar, cinnamon, and nuts.

  3. Roll tightly from the long side. Cut into 12 slices.

3. Shape the Wreath:

  1. Arrange rolls in a greased 9-inch round pan (or pie dish) in a circle, slightly overlapping.

  2. Cover and let rise 45-60 mins until puffy.

4. Bake & Glaze:

  1. Preheat oven to 350°F (175°C). Bake 22-25 mins until golden.

  2. Whisk powdered sugar, milk, and vanilla; drizzle over warm rolls.
