🍰 Gluten-Free “Slap Ya Momma” Pound Cake (So Good, It’s Legendary!)

This ultra-moist, buttery, vanilla-kissed GF pound cake is so delicious, it might just make you want to (lovingly) slap somebody! Perfectly dense yet tender, with a golden crust and rich flavor—100% gluten-free but tastes like the classic Southern favorite.


⏲️ Prep Time: 15 mins | Bake Time: 60-75 mins | Total Time: 1.5 hrs

🍞 Serves: 10-12


📝 Ingredients

For the Cake:

  • 1 ½ cups (3 sticks) unsalted butter, softened (or dairy-free butter)

  • 3 cups granulated sugar (or coconut sugar for less refined)

  • 5 large eggs, room temp

  • 3 cups gluten-free 1:1 flour blend (like King Arthur or Bob’s Red Mill)

  • ½ tsp xanthan gum (omit if your blend has it)

  • ½ cup whole milk (or almond milk for dairy-free)

  • 1 tbsp vanilla extract

  • ½ tsp almond extract (optional, but chef’s kiss)

  • ¼ tsp salt

For the Vanilla Glaze (Optional):

  • 1 cup powdered sugar

  • 2 tbsp milk (or cream)

  • 1 tsp vanilla extract


🔥 Instructions

1️⃣ Prep & Cream Butter/Sugar

  1. Preheat oven to 325°F (160°C). Grease a 10-inch Bundt pan or loaf pans.

  2. In a stand mixer, cream butter + sugar for 5-7 mins until fluffy.

2️⃣ Add Eggs & Dry Ingredients

  1. Beat in eggs one at a time, mixing well after each.

  2. Whisk GF flour, xanthan gum (if needed), and salt.

  3. Alternate adding flour mix and milk to batter, starting/ending with flour.

  4. Stir in vanilla + almond extract.

3️⃣ Bake to Golden Perfection

  1. Pour batter into pan, smooth top.

  2. Bake 60-75 mins (until toothpick comes out clean).

  3. Cool in pan 15 mins, then invert onto a rack.

4️⃣ Glaze & Serve

  1. Whisk glaze ingredients, drizzle over cooled cake.

  2. Slice and watch jaws drop!

✔ Room-temp ingredients = smoother batter.
✔ Don’t overmix! GF flour can get gummy.
✔ For extra richness: Swap ½ cup butter for cream cheese.
✔ Storage: Keeps 5 days airtight or freeze for 3 months.
