🍪 Gluten-Free Washboard Cookies (Old-Fashioned Crispy & Buttery!)

These crinkly, crispy-edged, buttery GF washboard cookies are a nostalgic treat—like the classic old-fashioned recipe, but 100% gluten-free with the same satisfying snap! Perfect for dunking in milk or gifting in a cookie tin.

Makes: ~24 cookies


📝 Ingredients

Dry Ingredients:

  • 1 ¼ cups gluten-free 1:1 flour blend (like Bob’s Red Mill)

  • ½ tsp xanthan gum (omit if your blend has it)

  • ½ tsp baking powder

  • ¼ tsp salt

Wet Ingredients:

  • ½ cup unsalted butter, softened (or dairy-free butter)

  • ¾ cup granulated sugar

  • 1 large egg (or flax egg for vegan)

  • 1 tsp vanilla extract

For the Classic Washboard Texture:

  • Extra sugar for rolling

  • A fork for crimping


🍴 Instructions

1️⃣ Cream Butter & Sugar

  • Beat butter and sugar until light and fluffy (~3 mins).

  • Add egg and vanilla; mix until smooth.

2️⃣ Combine Dry Ingredients

  • Whisk GF flour, xanthan gum (if needed), baking powder, and salt.

  • Gradually add to wet ingredients, mixing just until combined.

3️⃣ Chill the Dough

  • Roll dough into 1-inch balls, then chill on a plate for 1 hour (or freeze for 20 mins).

4️⃣ Shape & Bake

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.

  2. Roll each ball in extra sugar, then flatten slightly with a fork in a crisscross pattern (like washboard ridges!).

  3. Bake 10-12 mins until edges are golden.

  4. Let cool on the sheet for 5 mins (they’ll crisp up as they cool).

✔ Don’t overbake! They firm up as they cool.
✔ For extra crispiness: Use half butter, half shortening.
✔ Add flavor: ½ tsp almond extract or lemon zest.
✔ Storage: Keep in an airtight container for up to 1 week.
