Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

For the Parmesan Mushroom Sauce:

  • 2 tablespoons butter
  • 1 cup sliced mushrooms (button or cremini work well)
  • 1 garlic clove, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Chicken:

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper on both sides.
  • In three shallow bowls, set up your dredging station:
    • In the first bowl, place the flour.
    • In the second bowl, beat the eggs.
    • In the third bowl, combine the breadcrumbs and grated Parmesan cheese.
  • Dredge each chicken breast in the flour, shaking off any excess. Then dip it into the beaten eggs, and finally coat it in the breadcrumb-Parmesan mixture, pressing lightly to ensure the breadcrumbs stick.

2. Cook the Chicken:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Once hot, add the breaded chicken breasts and cook for about 4-5 minutes per side, or until golden brown and crispy. The internal temperature of the chicken should reach 165°F (74°C) when checked with a meat thermometer.
  • Once the chicken is cooked, transfer it to a plate and place it in the preheated oven to keep warm while you make the sauce.

3. Make the Parmesan Mushroom Sauce:

  • In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are tender and browned.
  • Add the minced garlic and cook for an additional 30 seconds until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, and cook for about 3-4 minutes until it thickens slightly.
  • Stir in the grated Parmesan cheese and season with salt and pepper to taste. Continue to simmer for another 2-3 minutes until the sauce is creamy and smooth.

4. Serve:

  • Place the crispy chicken breasts on serving plates. Spoon the creamy Parmesan mushroom sauce over the top of each chicken breast.
  • Garnish with fresh parsley for a burst of color and added freshness.
  • Serve immediately with your favorite side dishes, such as mashed potatoes, rice, or steamed vegetables.

Tips:

  • For extra crunch: If you prefer even more crunch, you can spray the breaded chicken with cooking spray before baking it in the oven to ensure it crisps up further.
  • Add herbs: You can enhance the flavor of the mushroom sauce by adding herbs like thyme or rosemary while simmering the sauce.
  • Make it lighter: If you want a lighter version, you can swap the heavy cream for half-and-half or use a bit of milk mixed with cornstarch to thicken it.
